The origin of the

A carnivorous plant
as host.

Scientists spent years investigating where the unique bacteria came from that turn milk into a thick “Nordic gel.” The answer was found in Scandinavian bogs.

DNA analysis confirmed that strains of Lactococcus lactis subsp. cremoris naturally live on the leaves of the carnivorous common butterwort (Pinguicula vulgaris). Our ancestors likely used this plant long ago to initiate early fermentation. In doing so, they unknowingly “domesticated” wild microbes that have since been passed from generation to generation in every jar of Viili.
